Ingredients

40 g raisins
50 ml rum or orange juice
150 g butter or margarine
200 g Dansukker Granulated Sugar
3 eggs
120 g plain flour
2 g Dansukker Vanilla Sugar
2 g baking powder

Instructions

Put the raisins in a bowl with the rum or juice and soak overnight.
Cream the butter or margarine with the sugar. Add the eggs one at a time, mixing thoroughly after each addition. Combine the dry ingredients and fold them into the mixture together with the raisins. Spoon the mixture into the muffin cases. Bake on the bottom shelf of the oven at 200°C for 15-20 minutes. Ideal for freezing.
