Lemon pickled herring

Ingredients

4 salted herring fillets, freshened
1 leek, cut into rings
50 g dill, finely chopped

Marinade
Juice of 3 lemons
100 ml water
150 g Dansukker Granulated Sugar
1 bay leaf
5 ml white peppercorns, crushed
5 ml allspice seeds, coarsely crushed
3 cloves

Instructions

Rinse the herring fillets thoroughly Cut them into pieces. Combine the ingredients for the marinade in a saucepan and bring to the boil. Allow the marinade to cool. Layer the herring, leek and dill in a jar. Pour the cooled marinade over the top. Refrigerate for at least 24 hours before serving.
