Berry muffins
Ingredients
3 eggs
300 g Dansukker Granulated Sugar
200 g desiccated coconut
75 g plain flour
1 tsp Dansukker Vanilla Sugar
200 ml liquid margarine
100 g berries, e.g. redcurrants, raspberries and/or blueberries
Instructions
Beat the eggs and sugar until fluffy. Stir in the desiccated coconut, flour, vanilla sugar and margarine. Divide the batter between 12 muffin cases. Press the berries into the batter. Bake in the centre of the oven at 190 °C for about 15 minutes.
