Ingredients
200 ml water
200 g Dansukker Granulated Sugar
125 ml vinegar (12%)
5 grains of allspice, crushed
5 grains of black or white pepper, crushed
Sauce
100 ml red onion, diced
100 ml leek, sliced
1 apple, peeled and diced
200 ml crème fraîche
10 g curry powder
6 g Dansukker Icing Sugar
1 g salt
Instructions
Mix the ingredients for the marinade in a saucepan and bring to the boil. Allow to cool. Cut the herring fillets into pieces and put them in a bowl or jar. Cover them with the cooled pickling liquid and refrigerate overnight.
Mix the sauce ingredients together. Drain the herring pieces and dry them on kitchen paper. Stir the herring into the sauce and refrigerate for 24 hours.
