Ingredients

4 eggs
200 g Dansukker Granulated Sugar
60 g plain flour
60 g potato flour
3 g baking powder
3 g Dansukker Vanilla Sugar
butter or margarine to grease the cake tin
breadcrumbs, semolina or sugar for the cake tin

Instructions

Beat the eggs and sugar until fluffy. Mix the remaining ingredients together and fold into the batter. Pour the batter into a greased, crumbed tin. Bake in the lower part of the oven for about 30 minutes at 175 °C. Leave the cake in the cake tin for 5 minutes, then turn out onto a rack. Slice the cake into three layers. Fill and decorate the cake however you like.

You can replace the granulated sugar with muscovado sugar and add 2-3 tbsp cocoa powder to the batter to make a chocolate cake base.
