Ingredients

1 kg whole or 600 g cleaned Baltic herring
1 tsp salt
1/2 tsp white pepper
1 dl grated horseradish
3 dl finely shredded leek
3 dl tomato juice
2 tbsp tomato purée
2 tbsp Dansukker White Syrup

 

To decorate
1 dl parsley, chopped 

Instructions

Rinse the herring and drain on kitchen paper.

 

Salt and pepper the flesh side of the herrings and coat with horseradish. Fold the herrings in half across the middle and put them in a frying pan or a wide, shallow saucepan. Sprinkle with the leek.

 

Combine the tomato juice, tomato purée and syrup and pour over the herring. Cover and simmer for about 10 minutes.

 

Sprinkle with the parsley and serve with freshly boiled potatoes and fresh vegetables or a salad. Can also be served cold as part of a buffet.
