Ingredients

2 kg fresh herring

Marinade:
200 ml white vinegar 12%
700 ml water

Spice mixture:
125 g salt
200 g Dansukker Icing Sugar
2 onions, sliced
15 ml allspice, crushed
15 ml white peppercorns, crushed
5 bay leaves, crumbled
5 g ground ginger
3 g ground cloves

Instructions

Gut, trim and rinse the herrings, but leave the backbone in place. Put the herrings in a large bowl. Mix together the ingredients for the marinade and pour it over the herrings. Refrigerate for 24 hours. Drain the herrings. Mix together the spices. Layer the herring with the spice mixture in a jar. Place a weight on top and refrigerate for 5-6 days. Serve as a topping on open sandwiches, or with boiled potatoes.
