Lime and mulled wine curd

Our curd recipes go well with yoghurt for breakfast, ice cream for dessert or a pancake buffet. Lime and mulled wine curd is a tart but sweet addition to your Christmas dessert table.

Ingredients

Juice of 3 limes (about 100 ml)
2 egg yolks
1 egg
380 g Dansukker Jam Sugar
100 ml mulled white wine
100 g butter at room temperature

Instructions

Squeeze the juice out of the limes, pour into a pan with the egg yolks, egg, jam sugar, and whisk together. Add the mulled wine.

Put the saucepan on the hob and simmer for a few minutes, whisking constantly.

Allow the curd to thicken and add the butter a little at a time, while stirring.

Take the saucepan off the heat and strain the curd. Pour into a warm, thoroughly cleaned jar. Keep refrigerated.
