Ingredients
1 kg water melon, preferably seed-free
100 g rucola lettuce
1 red onion
200 g yellow cocktail tomatoes
3-400 g feta cheese
20 Kalamata olives
Dressing
2 tbsp olive oil
2 tbsp Dansukker Brown Sugar
2 tbsp balsamic vinegar
1 tbsp finely chopped red chilli pepper
2 good pinches of coarse-ground black pepper
Instructions
Peel the melon and remove the large seeds if it is not seed-free. Cut into smallish pieces. Rinse the lettuce, and leave to drain. Peel, halve and slice the onion. Halve the tomatoes. Arrange the melon, lettuce, onion and tomatoes on the plates. Crumble the cheese over and decorate with the olives. Mix together the ingredients for the dressing and pour over the salad just before serving.
