Ginger beer

Ginger beer is a fresh ginger drink that is good both before and with a meal. Decorate with mint and sliced ginger for a festive look.

Ingredients

150 ml fresh ginger
190 g Dansukker Light Muscovado Sugar
Peel of three lemons, preferably uncoated
200 ml of lemon juice
1 l mineral water

To serve
Mint, sliced fresh ginger
Ice

Instructions

Wash and slice ginger with peel on. Put the ginger in a mortar and use a pestle to squeeze out the juice. Add the sugar.

Slice lemon peel and add to the ginger mixture. Squeeze until all the juice has come out.

Add lemon juice and mineral water. Refrigerate for about 1 hour. Sieve the mixture through a fine-mesh sieve.

Add ice to the glasses and pour over the ginger beer. Garnish with mint and sliced ginger.
