Ingredients
300 g of any berries,
zest of 3 organic lemons or 4 organic limes
1/2 pot of mint, lemon balm, basil or oxalis
340–425 g Dansukker Cane Sugar or Granulated Sugar
Instructions
Set the oven temperature to 50 °C.
Chop the larger berries and place on a baking sheet line with parchment paper.
Leave in the oven for at least 5 hours. Then switch the oven off and leave the berries in there overnight.
Cut, slice or crumble the berries and mix them with the sugar.
If you wish to use citrus zest or spices, grate the zest from the citrus or chop the spices, add to a mortar together with the sugar and use a pestle to crush.
Shelf life: will solidify after approx. one week, but can be crumbled with a mortar and pestle or with the hands. Store in a thoroughly clean jar, dry and tightly sealed.
Tip! Decorate your cake or dessert with flavoured sugar.
