Curried herring

Ingredients

1 kg whole or 600 g cleaned Baltic herring
1 tsp salt
1/2 tsp white pepper
2-3 tbsp curry powder
2 dl whipping cream
1 tbsp Dansukker Granulated Brown Sugar

To decorate
Parsley 

Instructions

Rinse the herring and drain on kitchen paper. Season with salt and pepper.

Grease an ovenproof dish. Fold the herrings in half across the middle or roll them up and put them in the oven dish. Sprinkle with the curry powder and top with the cream. Sprinkle with the brown sugar and bake in the centre of the oven at 200°C for about 20 minutes.

Sprinkle with the parsley and serve with freshly boiled potatoes and fresh vegetables or a salad. Can also be served cold as part of a buffet.
