Ingredients

500 g courgettes
150 ml water
Juice of 2 lemons
300-400 g Dansukker Jam Sugar
1 g ground cardamom


Wash, split and core the courgettes. Grate them. Rinse the lemon thoroughly and grate the zest. Juice the lemon. Combine the crated courgette, water, lemon zest and lemon juice, cover and simmer for 10 minutes. Add the jam sugar cardamom and boil for 3 minutes. Remove from the heat and skim off any scum. Pour into warm, sterilised jars. Seal. Store in a cool place.
