Ingredients

90 g plain flour
65 g Dansukker Superfine Sugar
50 g desiccated coconut
100 g butter, at room temp.
1/2 tsp ammonium carbonate
Optional: 50 g chocolate buttons

Icing
150 g Dansukker Icing Sugar

Alternative flavourings
1 1/2 tbsp lime juice + zest of 1 lime
1 1/2 tbsp fresh raspberry juice
1 1/2 tbsp freshly squeezed orange juice + zest of 1/2 orange

Instructions

Heat the oven to 200°C.

Mix all the ingredients in a bowl and combine using your hands to make a dough.

Divide the dough in two and roll into two lengths. Space the lengths on a baking sheet lined with baking parchment.

Gently flatten the dough lengths to a width of 4-5 cm. Bake the slices in the bottom of the oven for about 10 minutes.

Meanwhile, make the icing of your taste. Stir the ingredients together to make a smooth paste.

Let the lengths cool. Then spread an even layer of icing down the middle of the lengths and slice the lengths with a sharp knife. Wipe the knife after each slice.
