Tomato and mozzarella salad

Tomato and mozzarella salad

1 litre mixed tomatoes
200 g mozzarella
2 dl leek, finely shredded

1 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp water
1 tbsp fresh basil, chopped
1 tbsp fresh oregano, chopped
1 tbsp Dansukker SteviaSugar
2 pinches of salt
1 pinch coarsely ground black pepper
1 pinch Colman’s mustard powder

Halve the cherry tomatoes and chop up the larger tomatoes. Place in a bowl. Slice or dice the mozzarella and add to the tomatoes. Sprinkle with the leek. Mix all the dressing ingredients together and pour over the tomato mixture. Stir well. Refrigerate for at least 1 hour before serving. Serve with some good bread and smoked fish or ham.
