Set the oven temperature to 200°C.
Melt the fat in a saucepan. Mix in the remaining ingredients and stir to mix well.
Line a 1-litre bread tin with parchment. Pour in the mixture.
Bake in the lower part of the oven for 5 minutes until the cake just forms a surface. Remove from the oven and add jam along the middle of the cake.
Bake for another 20-25 minutes, until the cake has a lightly browned surface. It should be slightly sticky in the middle.
