Salted Beef with Wood Sorrel, Radishes, Rhubarb and Sunflower Oil

Salted Beef with Wood Sorrel, Radishes, Rhubarb and Sunflower Oil

Ingredients

1 kg beef fillet
40 g salt
200 g Dansukker Light Syrup
500 g rhubarb
180 ml white wine
1 bunch radishes
4 tbsp sunflower oil

 

Remove membranes from beef fillet, spread over the mixture of salt and syrup (40 g salt and 20 g syrup), cover with foil and leave in refrigerator for 7 days. Before serving, cut into thin slices.

Rhubarb Marinade
Pour water, syrup and white wine in equal parts into the saucepan, boil and let cool. Wash rhubarbs, cut leaves, peel, cut into cubes and place in syrup to marinate for 12 hours.

Decorate with sunflower oil dipped radishes.
