Glazed Duck Breast with Spinach, Vegetables and Goat Cheese

Ingredients

500 g spinach
4 tomatoes
1 cucumber
2 duck breasts
2 tbsp Dansukker Dark Syrup
100 ml soy sauce
50 g potato starch
salt
½ tsp soda
1 tbsp sesame oil
300 g goat's milk cheese
2 red onions
4 tbsp white wine vinegar
3 tbsp olive oil

 

Instructions

Mix soy sauce with potato starch, soda, sesame oil and syrup. Cut duck breast into slices and place in the marinade for 1 hour. Wipe the meat dry, then fry on a hot pan.

Peel onions, cut into small cubes and pan-fry in a small amount of oil. Add white wine vinegar and continue to simmer until the liquid has reduced by half. Add olive oil and syrup, stir, add salt if necessary, and let to cool. Rinse and chop spinach, wash and cut into cubes cucumbers and tomatoes. Arrange in a bowl, pour over the cooled sauce.
