Fat-free salad dressing

2 dl water
1 tsp potato starch
1/2 dl vinegar, any sort
Pinch of salt
1 pinches coarsely ground black pepper
1-2 tsp Dansukker SteviaSugar

3 tsp Colman’s mustard powder or
1 tbsp tomato purée and 1/2-1 tsp sambal oelek or
1 tsp grated garlic or
1-2 tbsp salad seasoning or
grated zest and juice of 1 untreated lemon

Combine the water and potato starch in a saucepan and bring to the boil. Remove from the heat and allow to cool. Add the vinegar, salt, pepper and your chosen seasoning. If using mustard powder, mix it with the water and the potato starch before heating the mixture. Pour into a bottle. Store in the refrigerator. Will keep for about two weeks.
