Ingredients
40 elderflower heads
3 lemons
2 litres boiling water
1 1/2 kg Dansukker Granulated Sugar
50 g citric acid
Instructions
Rinse the elderflower heads and leave them to drain on a towel. Put them in a bucket or large bowl. Thoroughly rinse the lemons, slice them and add them to the elderflowers. Bring the water to the boil and pour it over the elderflowers and lemons. Add the sugar and stir until dissolved. Stir in the citric acid. Cover and stand in a cool place for three days. Strain through a cheesecloth for 30 minutes. Pour into sterilised bottles. Store in the fridge or freezer.
Variation
Add a cinnamon stick or 1 tbsp freshly grated ginger.
The elderflowers can be replaced with lilac blossoms or blackcurrant leaves.
