500 g cucumber, peeled, deseeded and diced
250 g onion, finely chopped
1 dl red pepper, diced
3 tbsp salt
2 1/2 dl white wine vinegar
1 tsp yellow mustard seeds
2 dl Dansukker SteviaSugar
1 tsp potato starch

Put all the vegetables in a bowl. Add the salt and stir. Leave to stand for 2 hours. Rinse the vegetables with cold water to completely remove the salt. Drain off all the water.

Put all the ingredients in a saucepan and bring to the boil. Simmer for about 20 minutes. Mix the potato starch with a little water and stir into the cucumber mixture to thicken it. Pour into warm, sterilised jars. Seal. Store in a cool place.
