Cinnamon ice cream with apple sauce

4 egg yolks
1 dl Dansukker SteviaSugar
2 dl low-fat crème fraîche
1/2 dl Dansukker Glucose Syrup
1-2 tsp ground cinnamon

1-2 apples, peeled and diced
Juice of 1 lime
2 dl water
1/2 dl Dansukker SteviaSugar
1 tsp potato starch

Beat together the egg yolks and steviasugar. Add the crème fraîche, glucose syrup and cinnamon. Strain through a fine-meshed sieve. Process the mixture in an ice cream machine or leave it in the freezer for at least 5 hours, stirring occasionally.

Mix the diced apple, lime juice and water in a saucepan and simmer until the apples are just tender. Add the steviasugar. Thicken the sauce with potato starch mixed with a little water. Serve the sauce hot, lukewarm or cold with the ice cream.
