Baked beetroot with feta cheese

1 kg beetroots
1 tbsp Dansukker SteviaSugar
3 tbsp low-fat margarine, melted
2 tsp salt flakes
50 g pine nut kernels

1 tbsp Dansukker SteviaSugar
1 tbsp olive oil
1 tbsp water
3 tbsp balsamic vinegar
Generous pinch ground aniseed
2 tbsp finely chopped fresh thyme

200 g low-fat feta cheese

Wash the beetroots. Boil for 30 minutes. Run cold water over them, then rub away the skins. Cut into wedges and place in an ovenproof dish. Mix the SteviaSugar with the margarine and pour over the beetroot. Sprinkle with the salt and pine nuts. Bake at the centre of the oven at 250 °C for approx. 10 minutes.

Mix the dressing ingredients together. Arrange the beetroots on four plates. Crumble the feta over the top. Drizzle with the dressing. Serve.
