Asparagus with Parma ham

600 g asparagus, any type
200-300 g Parma ham or other air-dried ham
4 spring onions, thinly sliced

Fat-free dressing flavoured with tomato and sambal oelek (see recipe)

Trim away the hard bottom part of the asparagus. Simmer the asparagus for about 2-5 minutes in lightly salted water until tender (2 tsp salt per litre water). Rinse the asparagus with cold water. Cut the ham into the same number of slices as the asparagus spears. Wrap the ham slices around the asparagus. Arrange the asparagus on four plates. Sprinkle the spring onions over the top. Drizzle with the dressing and serve.
