Red onion and chilli pickle

Red onion and chilli pickle

1 jar 25 minutes
Red onion and chilli pickle is condiment that goes extremely well with most dishes. It is also very easy to make. A little luxury with Friday's dinner, or use your red onion and chilli pickle with hamburgers or tacos.
Ingredients

2 red onions
1 chilli
100 ml vinegar (12%)
180 g Dansukker Cane Sugar Granulated
300 ml water


Slice the red onions. Rinse and chop the chilli. Place in a thoroughly-cleaned jar.

Boil the vinegar, sugar and water until the sugar dissolves. Allow to cool slightly and then pour over the red onion and chilli. Refrigerate for about 1 hour.

Store in a cool place.

Chilli syrup

Chilli syrup

1 small glass bottle 25 minutes
Do you like more heat in your desserts? Chilli syrup is particularly good sprinkled over fresh berries or ice-cream or added to apple pie.
Ingredients

2 chillies
280 g Dansukker White Syrup
200 ml water


Rinse and finely chop the chilli. Combine all the ingredients in a heavy-based saucepan. Boil for 5 minutes, stirring occasionally. Pour the syrup into a thoroughly-cleaned bottle with a cap. Leave to cool uncapped. Store in the refrigerator.

Root vegetable marmalade with thyme

Root vegetable marmalade with thyme

2 jars 30 minutes
Root vegetables can be used for almost anything. This tasty root vegetable marmalade with thyme is delicious with barbecued foods in the summer. Try making the marmalade from vegetables that you particularly like.
Ingredients

500 g root vegetables of your choice
2 tbsp water
3-4 tbsp vinegar 12%
250 g Dansukker Jam Sugar
1 tbsp fresh thyme


Peel and grate the root vegetables using a grater. Boil with the water and vinegar in a pan for 3 minutes. Mix with a mixer and add the sugar and thyme.

Boil for a further 4 minutes. Skim off any foam and pour the jam into hot, thoroughly cleaned jars. Seal. Store in a cool place.

Pickled summer vegetables

Pickled summer vegetables

Ingredients

3 courgettes
6 peppers, assorted colours
6 new carrots
1 small cauliflower
10 small red onions
1 garlic head, optional
About 5 cm piece of horseradish
1 dl salt

Marinade
500 ml water
1000 ml white vinegar
700 g Dansukker granulated sugar
15 g mustard seeds


A crisp, fresh pickle that tastes great with grilled food.

Rinse the vegetables and chop into pieces. Peel the onion and garlic. Put all the vegetables in a bowl and sprinkle with the salt. Refrigerate for 24 hours. Rinse off the salt. Bring the water to the boil. Add the vegetables and boil for a couple of minutes. The pepper and courgette need only be dipped briefly in the water. Put the vegetables in warm, thoroughly cleaned jars. Mix the ingredients for the marinade in a pan and bring to the boil. Skim off any scum. Pour the hot marinade over the vegetables. Seal. Store in the refrigerator.
Keeps for several months in the refrigerator.

Pickled lemons

Pickled lemons

Ingredients

2 kg organic lemons
1000 ml water
100 g sea salt
500 ml white wine vinegar
200 g Dansukker Granulated Sugar
2 bay leaves
1 cinnamon stick
3 cloves
1 tsp black peppercorns 


Wash the lemons thoroughly and put them in warm, sterilised jars. Combine all the marinade ingredients in a saucepan and bring to the boil. Pour the hot marinade into the jars and seal. Leave to mature for at least 4 weeks before serving.

You can also quarter or slice the lemons. In that case, they will be ready to eat after 1-2 weeks.

Garlic cucumber

Garlic cucumber

about 1 1/2 kg
Ingredients

30 small cucumbers
1 onion
2 fresh red chillies
10 garlic cloves

Marinade
500 ml water
100 ml pure vinegar (24%) or 200 ml spirit vinegar (12%)
200 g Dansukker Granulated Sugar
60 g salt
1 piece fresh horseradish


Wash the cucumbers thoroughly. Peel the onion. Halve and slice it. Rinse the chilli, cut it lengthwise and remove the seeds. Peel the garlic. Layer the cucumber with the onion, garlic and chilli in warm sterilised jars.

Combine the ingredients for the marinade in a saucepan and bring to the boil. Allow to cool, then pour over the cucumber. Add two pieces of horseradish to each jar. Seal. Leave for 4 weeks before serving. Store in the refrigerator.

Preserved cherry tomatoes

Preserved cherry tomatoes

About 1 kg
Ingredients

1000 g cherry tomatoes
75 g salt
3-4 sprigs fresh thyme

Marinade
200 ml white vinegar 12%
300 ml water
300 g Dansukker granulated sugar
1 tsp Dansukker Vanilla Sugar
1 cinnamon stick
5 g fresh ginger, finely diced
3 cloves


Wash the tomatoes. Cut them in half and sprinkle with the salt. Refrigerate for 3-4 hours. Rinse the salt off the tomatoes and leave them to drain on a towel.Put the tomatoes in warm, thoroughly cleaned jars. Add a couple of thyme sprigs. Combine all the ingredients for the marinade in a pan and bring to the boil. Skim off any scum. Strain the marinade over the tomatoes. Seal. Store in the refrigerator.

Preserved onion

Ingredients

1000 g pickling onions or other small onions
2 Solo garlic heads
5-6 sprigs fresh thyme
1 fresh red chilli
800 ml apple cider
600 ml white vinegar
500 g Dansukker granulated sugar
1 cinnamon stick
1 star anise
10 white peppercorns
1 g salt


Put the onions in boiling water. Pour away the water. Rinse the onions in cold water and peel them. Peel and slice the garlic heads. Halve, deseed and finely shred the chilli. Put the syrup, vinegar, sugar and spices in a saucepan and bring to the boil. Skim off any scum. Layer the onion with the garlic, thyme and chilli in warm sterilised jars. Pour the warm marinade over the top. Seal. Store in the refrigerator. Leave for a week before serving.

Preserved red cabbage

Preserved red cabbage

Ingredients

1000 g red cabbage, shredded
75 g salt
1 fresh red chilli
400 ml white wine vinegar
200 ml water
100-150 ml Dansukker light syrup
2 g black pepper, coarsely ground
1/2 g ground cloves
10 g grated fresh ginger


Layer the cabbage with the salt in a bowl and leave overnight. Rinse the cabbage with cold water to remove all the salt. Rinse and deseed the chilli. Cut it into thin strips and mix with the cabbage. Put the cabbage mixture in a jar. Bring the vinegar, water, syrup, pepper, cloves and ginger to the boil. Let the liquid cool for 5 minutes, then pour into the jar. Seal. Store in the refrigerator. Good served with grilled pork or chicken.

72-hour cucumber

72-hour cucumber

Ingredients

1000 g cucumber
25 g yellow mustard seeds

Flavourings
3-4 dill sprigs or 2 Solo garlic heads and 2 fresh red chillis

Marinade
400 ml white vinegar
100 ml water
450 g Dansukker granulated sugar
100 g salt
2 g white peppercorns


Wash the cucumbers well. Cut into 1 cm thick slices. Peel and halve the garlic heads. Rinse the chilli and dill. Layer the cucumber in jars with the mustard seeds and dill or with the cucumber and chilli. Mix the ingredients for the marinade in a saucepan and bring to the boil. Pour the marinade over the cucumber. Ready to eat after 72 hours.

Marinated cucumber

Marinated cucumber

4 servings
Ingredients

1 cucumber
100 ml freshly squeezed lemon juice
100 ml white wine vinegar
100 g Dansukker granulated sugar
1 red onion
5 g parsley, chopped
2 g salt
1 g black pepper, coarsely ground


Peel the cucumber, cut it in half lengthwise and remove the seeds. Cut the cucumber halves into slices 1 cm thick. Peel, halve and slice the onion. Put the cucumber, onion and parsley in a serving bowl. Mix together the lemon juice, vinegar and sugar and pour over the vegetables. Marinate for at least 1 hour before serving. Serve with grilled meat, ideally strongly spiced.
