Elderflower magic

The elder bush is a fabulous plant. In June and July it bears yellowish-white blossoms, and its dark purple berries ripen in August. There are many delicious uses for both the flowers and the berries. Elderflower cordial is a real classic and is very easy to make. Or why not try a more unusual delicacy – deep-fried elderflowers.

Elderflower cordial

Elderflower cordial

about 2 1/2 litres
Ingredients

40 elderflower heads
3 lemons
2 litres boiling water
1 1/2 kg Dansukker Granulated Sugar
50 g citric acid


Rinse the elderflower heads and leave them to drain on a towel. Put them in a bucket or large bowl. Thoroughly rinse the lemons, slice them and add them to the elderflowers. Bring the water to the boil and pour it over the elderflowers and lemons. Add the sugar and stir until dissolved. Stir in the citric acid. Cover and stand in a cool place for three days. Strain through a cheesecloth for 30 minutes. Pour into sterilised bottles. Store in the fridge or freezer.

Variation
Add a cinnamon stick or 1 tbsp freshly grated ginger.

The elderflowers can be replaced with lilac blossoms or blackcurrant leaves.

Lemon and elder syrup

Lemon and elder syrup

1 small glass bottle 25 minutes
As well as a flavouring for desserts, this sweetly tart lemon and elderflower syrup is perfect for both little and big pancakes. Sprinkle the lemon and elderflower syrup over your stack of pancakes and serve with vanilla ice cream.
Ingredients

100 ml concentrated elderflower cordial
100 ml water
280 g Dansukker White Syrup
Juice of 1 lemon


Combine all the ingredients in a heavy-based saucepan. Boil for 5 minutes, stirring occasionally.

Pour the syrup into a thoroughly-cleaned bottle with a cap. Leave to cool uncapped. Store in the refrigerator.

Elderflower granita

Elderflower granita

Ingredients

1 1/2 tbsp Dansukker Icing Sugar
300 ml water
50 ml Dansukker Glucose Syrup
Juice and rind of 1 untreated lime
50 ml concentrated elderflower cordial
Fresh mint
3 tbsp white wine (optional)


Mix all ingredients together in a large bowl.

Pour the mixture into a clean high-sided roasting pan and place in the freezer.

Mix regularly using a fork to give fine ice crystals.

Serve in glasses that have been in the freezer - the granita will melt more slowly.

Elderflower panna cotta with lime-marinated berries

Elderflower panna cotta with lime-marinated berries

Serves 4 2 hours
Ingredients

400 ml whipping cream
50 ml concentrated elderflower cordial
95 g Dansukker Jelly Sugar Multi
400 ml berries, any kind
Juice and zest of 1 untreated lime
45 g Dansukker Cane Sugar
2 tsp Dansukker Vanilla Sugar


Combine the cream, cordial and jelly sugar in a saucepan and boil for 30 seconds. Pour into four glasses and refrigerate until set.

Rinse and sort the berries, then mix them with the lime zest, cordial and sugar.

Leave to stand until you are ready to add them to the panna cotta.

Elderflower curd

Elderflower curd

Ingredients

150 ml concentrated elderflower cordial (preferably home-made)
2 tbsp Dansukker Cane Sugar Granulated
2 eggs
75 g butter


Mix the cordial, sugar and eggs in a large bowl over a water bath until thick.

Remove from the heat and stir in the butter a little at a time.

Pour the curd into a clean bowl or jar. Store in the refrigerator.

Elderberry cordial

Elderberry cordial

Ingredients

2 kg elderberry bunches
1/2 kg apples
500 ml water
600 g Dansukker Granulated Sugar per litre of strained liquid 


Rinse the berries and apples. Remove the coarse stalks from the berries and cut the apples into wedges. Put the berries and apple wedges in a pan and add the water. Bring to the boil, cover and simmer for 30 minutes. Strain through a jelly cloth for 30 minutes. Measure the juice and pour it into a pan. Add 6 dl sugar per litre of liquid and boil for 5 minutes, stirring constantly. Skim off any scum. Pour into warm, sterilised bottles. Seal. Store in the refrigerator.

Deep-fried elderflowers

Deep-fried elderflowers

4 portions
Ingredients

8-12 elderflower heads
150 g flour
15 g Dansukker Granulated Sugar
1/2 g salt
2 egg yolks
2 egg whites
300 ml water
30 ml liquid margarine
Oil for deep-frying

To coat
Dansukker Granulated Sugar

Strawberry sauce
250 g strawberries
15 g Dansukker Icing Sugar


Start with the sauce. Liquidise the strawberries with a fork or in a blender. Add the icing sugar and set aside. Shake the elderflowers to remove any loose flowers. Combine the flour, sugar and salt in a bowl. Add the egg yolks. Whisk in the water a little at a time. Whisk the batter until smooth. Add the margarine. Beat the egg whites until stiff and fold into the batter. Dip the elderflowers in the batter and deep fry in 180°C hot oil. Dip the freshly fried elderflowers in sugar and arrange on serving plates. Serve immediately with the strawberry sauce.

Strawberry and elderflower cordial

Strawberry and elderflower cordial

Roughly 1 1/2 litres 40 minutes + 3 days
Ingredients

1 litre strawberries
10 elderflower heads
1 untreated lemon, sliced
15 g citric acid
1 litre water
1 kg Dansukker Granulated Sugar
2 g sodium benzoate (omit if cordial is to be stored in the freezer)


Rinse the elderflowers and strawberries thoroughly. Mash the strawberries. Combine strawberries, elderflowers, lemon slices and citric acid in a bowl. Bring the water and sugar to the boil. Dissolve the sodium benzoate in a little of the warm syrup and pour back into the pan. Pour the hot syrup over the mixture in the bowl. Cover and stand in a cool place for three days. Strain through a cheesecloth for 30 minutes. Pour into sterilised bottles, filling them right to the top. Seal. Store in a cool place. The cordial can be stored in the freezer.

Refreshing summer drink

Refreshing summer drink

6 glasses
Ingredients

3 tbsp Dansukker Granulated Sugar
Juice of 2 lemons
Ice cubes, crushed
1 dl concentrated elderflower cordial
1 l mineral water 


Combine the citrus juices and sugar in a jug and stir until the sugar dissolves. Add the crushed ice and top up with the mineral water. Serve immediately. Also good served warm, or as an alcohol-free “dessert wine”.

Strawberry-elderflower tonic

Strawberry-elderflower tonic

4 glasses
Ingredients

1/2 litre strawberries
2 dl concentrated elderflower cordial
2 tbsp Dansukker Superfine Sugar
2 tsp Dansukker Vanilla Sugar
8 cl gin
4 dl Scweppes tonic water 


Fill four glasses half-way with ice. Divide the gin between the glasses. Liquidise the strawberries, cordial and both sugars. Strain and pour into the glasses. Dilute with the water.
