Blackberry deluxe

These wonderful berries work really well in baked goods, smoothies, jams and juices. They’re also a safe bet for decorating and garnishing food. Blackberries ripen in late summer and early autumn. While you may not be able to find them growing wild near your home, it’s usually easy to find fresh blackberries at stores and fruit stands during the summer.

Blackberry jam with gin

Blackberry jam with gin

2 jars 25 minutes
Ingredients

1 kg blackberries
300 ml water
1 kg Dansukker Jam Sugar
100 ml gin


Rinse and pick over the blackberries. Put them in a saucepan with the water, cover and boil for 10 minutes. Add the sugar and boil for 3 minutes. Stir in the gin. Remove from the heat and carefully skim off any scum. Pour the marmalade into warm, sterilised jars. Seal tightly. Store in a cool place.

Blackberry cordial

Blackberry cordial

Makes about 1 litre 25 minutes
Ingredients

1000 g blackberries
300 ml water
375 g Dansukker Dark Muscovado Sugar


Bring the water to the boil and add the berries. Cover with a lid and leave to boil for about 10 minutes.
Mash the berries against the sides of the pan. Strain and then add the Muscovado sugar.
Bring to the boil again for a few minutes. Pour into clean bottles and keep cool.

Individual blackberry cobblers

Individual blackberry cobblers

Serves 6-8
Ingredients

Topping
200 ml flour
250 ml Dansukker Organic Cane Sugar Fairtrade
1 tsp baking powder
1 tsp Dansukker Vanilla Sugar
2 eggs, lightly beaten

Berry filling
500 g - 1 kg blackberries or berries of your choice
2 tbsp potato starch
100 ml Dansukker Organic Cane Sugar Fairtrade

125 g butter, melted


Preheat the oven to 190 °C.

Topping: Mix together the flour, sugar, baking powder and half of the egg. Using your fingers combine to a crumbly dough. Add more egg if necessary.

Filling: Carefully blend the berries with the potato starch and sugar until evenly mixed.

Place the berries in the forms, add the topping and pour over the melted butter.

Bake in the oven for about 30-35 min until golden brown.

Leave to cool slightly and serve with vanilla ice cream or thick yoghurt.

Chocolate mousse with blackberry compote

Chocolate mousse with blackberry compote

8 portions
Ingredients

Blackberry compote
250 g blackberries
95 g Dansukker Jelly Sugar Multi

Chocolate mousse
100 g dark chocolate, 70%
2 tbsp Dansukker Icing Sugar
3 tbsp Dansukker Muscovado Syrup
1 tsp Dansukker Vanilla Sugar
1 egg yolk
200 ml whipping cream


For the blackberry compote, mix the berries and sugar in a saucepan. Boil for 5 minutes. Leave to cool.
For the chocolate mousse, break the chocolate into small pieces and melt in a microwave oven or over a water bath.
Stir the sugar, syrup and egg yolk into the melted chocolate. Stir to a smooth mixture. Set aside to cool.
Lightly whisk the cream. Mix 1/3 of the cream into the chocolate mixture. Fold in the remaining cream.
Fold some of the blackberry compote into the chocolate mousse. Save the rest for decoration.
Divide the mousse between sundae dishes and leave to cool in the refrigerator for at least 1 hour.

Blackberry salad with creamy cinnamon sauce

Blackberry salad with creamy cinnamon sauce

serves 4
Ingredients
500 g(1 litre) blackberries
2 lemongrass stalks
100 ml water
150 g Dansukker Cane Sugar

Cinnamon sauce
150-200 ml fromage frais or quark
2-3 tbsp Dansukker Icing Sugar
2 tsp Dansukker Vanilla Sugar
1 tsp ground cinnamon

Cut the lemongrass in half lengthwise and boil it with the cane sugar and water for 3-4 minutes. Put the blackberries in the hot syrup and set aside to cool.

Mix together all the ingredients for the sauce and serve with the berries.

Blackberry shake

Blackberry shake

1 glass
Ingredients

150 g blackberries
200 ml milk
40 g vanilla ice cream
1/2 tsp Dansukker Vanilla Sugar
1 tbsp Dansukker Icing Sugar


Blend the berries, milk, ice cream, vanilla sugar and icing sugar, sieve the mixture and pour into a glass. Garnish with berries on a cocktail stick.

Blackberry dessert in a glass

Blackberry dessert in a glass

4 servings
Ingredients

200 g blackberries
50 ml Dansukker Jelly Sugar Multi
150 ml double cream
2 tbsp Dansukker Jelly Sugar Multi
1 tsp Dansukker Vanilla Sugar
8 tbsp egg liqueur

To decorate
4 blackberries


Rinse the blackberries. Mash or liquidise them. Put the berries and jelly sugar in a saucepan and bring to the boil. Whip the double cream with the jelly sugar and vanilla sugar until firm.

Pour two teaspoons of egg liqueur in each of four glasses. Distribute the mashed or liquidised blackberries between the glasses. Top with double cream and garnish each glass with a blackberry. Serve immediately.

The same recipe can be made with other berries, such as blackcurrants or blueberries.

Small blackberry tarts

Small blackberry tarts

makes 4-6
Ingredients

Pastry
50 g quark
50 g Dansukker Superfine Sugar
15 g Dansukker Vanilla Sugar
1 g salt
20 ml oil
15 ml milk
120 g plain flour
4 g baking powder

Filling
3-400 g blackberries
2 eggs
50 g Dansukker Superfine Sugar
15 g Dansukker Vanilla Sugar
100 g crème fraiche
50 g hazelnuts, ground or chopped
12 g potato starch

Decoration
10 g Dansukker Icing Sugar


Quickly work together the pastry ingredients into a dough. Press the dough into individual tart tins and refrigerate for 30 minutes. Put the blackberries in the tins. Beat together all the remaining ingredients for the filling and pour over the berries. Bake in the lower part of the oven at 175 °C for about 20 minutes. Leave to cool slightly before serving. Dust with icing sugar just before serving. Serve with crème fraiche, whipped cream or vanilla ice cream.
